This berry spinach salad is perfect for a 4th of July barbecue (it’s red, white and blue) or Labor Day party, as well a spring or summer potluck or picnic.
  • 6 cups organic baby spinach
  • 1 cup organic strawberries, halved
  • 1/2 cup organic raspberries
  • 1/2 cup organic blueberries
  • 1/3 cup goat cheese, crumbled
  • 1/3 cup red onion, thinly sliced
  • 1/4 cup pecans or walnuts, roughly chopped
  • 1/2 cup Cranberry Pear or Raspberry White Balsamic Vinaigrette (see recipe below)

Add the spinach, strawberries, raspberries, blueberries, red onion, goat cheese, and pecans or walnuts to a large mixing and toss together. 

Cranberry Pear Vinaigrette Dressing

  • 1/2 cup olive oil
  • 2-3 tablespoons of Dry Creek Olive Company Cranberry Pear or Raspberry White Balsamic Vinegar 
  • 1 tsp Dijon or stone-ground mustard
  • 1/4 tsp salt
  • 1 clove of garlic, crushed
  • pepper to taste

Whisk dressing ingredients together in a bowl. Taste and adjust ingredients to your liking. Drizzle over salad!
